Garlic Pepper Chicken Salad with Celery and Walnuts

Chicken Salad worthy of a $6 Lunch Price Tag. Guess how much it cost me? Well, for that serving, I'm not sure. I can only tell you that it cost me about $6 to make a HUGE batch of it. :)

It's really made from {gasp} leftovers - shhhh! Don't tell anyone that it only took like 5 minutes to make it. HA! My husband is actually the one that created this amazing recipe. He took 2 of the 5 grilled Garlic Pepper Chicken Breasts and chopped them well. The chicken went in a large mixing bowl. He diced  small green apple to add to the bowl. The walnuts and celery were bought chopped. Then he mixed in the mayo, Spinach & Herb Mix, Onion Onion.  Let it sit in the fridge for an hour or so to blend flavors. Then enjoy as a sandwich, with crackers or by itself over greens.

You'll need:
2 chicken breasts made from this blog recipe: Grilled Chicken using Garlic Pepper
Spinach & Herb Mix
Onion Onion
1/2 cup mayo
1/4 cup chopped celery
1/4 cup chopped walnuts
small green apple, chopped
