Egg Muffins



AHHHH - Breakfast! The MOST important meal of the day. Did you know that we really need 80% Protein to have a focused day? Well, at least my family does. We can TOTALLY tell when we either skip breakfast or grab something sugary and full of carbs. Yep, we crash before lunch or our mind wanders and have a hard time focusing on whatever task we are trying to accomplish. So we KNOW this, however what is our reasoning for NOT eating well, in the AM. One word --> TIME!  Yep, the Morning Rush in the house is often times worse than the freeways ;) Here is your answer: Prep BEFORE the start of the day. Either the night before some of you can do a few nights, prior. Here is an easy PROTEIN Packed recipe that you can Grab and GO, while feeling good about what you and your family are eating. 











Servings: 12
Ingredients:
  • 6 eggs
  • Meat (optional) – Here I browned two sausage patties (frozen, no MSG or other additives brand). You could also add cooked bacon, leftover ham, diced chicken sausages, broccoli, peppers etc
  • 3 TBSP Coconut Milk
  • 1 TBSP (half a cap) Spinach & Herb Seasoning
  • a pinch (yes, I used the labeled measuring spoon of Garlic Garlic and Seasoned Salt
  • 2 slices American Cheese OR you can use shredded blend
What to Do:

Preheat oven to 350 and prepare 12 muffin cups or spray 12 muffin tin


 Cook the sausage, bacon or whatever meat you are using and pat well to remove grease




 Whisk eggs together with coconut milk, Garlic Garlic, Spinach & Herb and Seasoned Salt




Fill the muffin cups 1/2 way. I used a 1/4 cup measuring cup and eyeball 1/2 way. You could fill a 1/4 cup measuring OR just eyeball it and pour into the muffin tin



Slice or crumble the meat then add a little to each muffin. I sliced the sausage length ways, turn 1/4 way then sliced again. This gave me 5 small pieces. I've used bacon and just crumbled it. You can even use both, if you want. Broccoli, Peppers, Mushrooms, Tomatoes or other veggies can be subbed in for meat. If you add all of it, then just be aware of not over filling the muffin cups. Cut cheese slices into the size square you want (2 sizes below), place on top of mixture. You can also use Parmesan Cheese or Feta Cheese, if you prefer.

Bake for 30-35 minutes until tops turn golden.


These keep well in the fridge for 1-2 weeks! So do like us and make a few batches at a time. :) Enjoy!
