Roasted Squash

It's Summer and that means that SQUASH is abundant, right now. Yellow, Zucchini, Spaghetti and Acorn are wonderful when roasted INSTEAD of fried. Here is a quick and easy way to do it and fool your Brain into thinking it's fried ;)

Ingredients:

1 large Zuchinni
2 medium Yellow Squash
Roasted Garlic Infused Oil ( Or Balsamic and Basil Dipping Oil works well, too)
Seasoned Salt

Slice squash and place on a sprayed cookie sheet. Brush with Oil and then sprinkle with Seasoned Salt. Bake at 400 degrees for 25-30 minutes. Using a spatula turn the pieces over half way through baking.

Told ya, it was easy. If you want a "bread coating" then you can sprinkle Corn Meal before you put them in the oven.  This also works for OKRA, too! Enjoy having your "fried squash" without all the BAD that comes with the Indulgence. ;)
