Slow Cooked Simply Salsa Chicken over Rice

Yesterday was Sunday and I knew that we'd be after dinner time before we were home from Church. Before we left at 4pm, I added a few things, that I had in my pantry, into my Slow Cooker so we'd be able to eat soon after getting home. Yet again, another yummy outcome from the Slow Cooker!

I did have to add sour cream and cheese to mine, as it brought too much heat for me. Brian, on the other hand, said it was fabulous the way it was. :)
Emma Leigh, my 10yr, decided that she not only wanted to mix hers with sour cream and cheese but roll it inside a flour tortilla. JR, my 4 yo, was too tired to eat except just a bit or two of mine.



Ingredients:
1 1/2 lb Chicken Breasts, cubed or 2 cans of white meat chicken, undrained
1 can of diced tomatoes
1 TBSP (2 if you like Spicy) of Simply Salsa
2 bags of instant rice

Directions:
Empty the tomatoes into the Slow Cook and stir in Simply Salsa. Add can of chicken with the juice. Cover and cook on low for about 3 hours. When ready to serve prepare the instant rice according to directions. Serve over the rice.


This dish could also use left-over cooked chicken.  Remember raw chicken s great-as long as it was cubed. Using whole chicken pieces would require  twice the cook time. Also, if fresh tomatoes are in Season, they could be chopped and added instead of getting them from a can.
