Meat Scrambler over Toast

I made a FABULOUS Meat Scrambler over Wheat Toast that could put Denny's out of business ;) HA! My 10yo daughter, who is not a big breakfast meat fan, was singing it's praises. This was very quick and came from my head. I realized that I didn't have enough eggs nor toast to make French Toast, which is what I went in the Kitchen to prepare for dinner. So down to the freezer I went to grab a roll of sausage. I popped in the microwave to defrost for a few minutes. Then proceeded to make another WINNER DINNER! Well, at least in my Family's eyes and that's all that really matters to me. :)

Ingredients:
6 eggs
1/4 cup milk
2 TBSP Bacon Bacon
1 TBSP Onion Onion OR small onion chopped if you want actual onion strips
1/2 cup shredded cheddar cheese (you could probably use American or Moz too)
1 lb roll of breakfast sausage (we like Jimmy Dean mild)
8 pieces of sliced Wheat Bread

Directions:
Open the sausage roll into a skillet and scramble on medium heat, breaking the meat into small pieces. Brown meat. Meanwhile, whisk eggs and milk together, then stir in Bacon Bacon, Onion Onion (or chopped onion) and cheese. Once the sausage is completely browned, add egg mixture and stir/fold like you are scrambling eggs. Butter pieces of bread and place on a cookie sheet. Broil in oven for a few minutes to desired toast. Serve egg/meat mixture over toast.



I took a few pix with my iPhone, however they didn't turn out very well when I moved them to the computer. You'll just have to make it for yourself to see how DENNILICIOUS it really is! teeheehee
