Corn Black Bean Breakfast Burritos

Many of you know that one of my ALL TIME FAVORITE TS products is Corn Black Bean Salsa! Well last night, I tried something new and it wont be the last time that I make them. It's very easy to do and can actually be a meatless meal if you want it to be. Of course, in my house Brian MUST have meat so we had bacon as a side to it. There would be lots of gasps and "reallys" at the table if I didn't have some sort of dead animal for consumption :0 lots of pics again on this posting.

8 eggs
1/4 cup milk
1/2 cup shredded cheddar cheese
3 shakes of Seasoned Salt
4 TBSP Corn Black Bean Salsa
8 large flour tortillas
Ole' Ole' Fiesta Sauce (optional)

Crack 8 eggs into a bowl and shake the Seasoned Salt jar 3 times.
Use a whisk to break yolks.
Add 1/4 cup milk and whisk some more.
Add 2 TBSP butter to a skillet, heated on Medium heat

After butter melts in the pan, pour the egg mixture into it.
Add 4 TBSP Corn Black Bean Salsa.

The eggs will be starting to set in the pan. Use the spoon to lift the mixture off the bottom of the pan and start to scramble the eggs. Add 1/2 cup cheddar cheese, continue stirring till cooked.

Take a flour tortilla in one hand and scoop some of the egg mixture into the middle, then fold

and roll over to plate. There is enough filling to do this for 8 large tortillas. It's awesome to dip or spoon on a little Ole Ole Fiesta Sauce. I mixed mine with sour cream to cut the heat a little as the Ole Ole is a DEFINITE party in the mouth!
