Chicken Enchilada Soup

Those of you who follow me on facebook know that I've been craving Chicken Enchilada Soup. The Ole' Ole' Fiesta Sauce is the perfect ingredient, however I didn't have a base for the recipe. So I went and did what I do best--Tastefully Simplized one that I found. This one is from a search.TS products bring such enhancement to meals that you really don't need to add a bunch of fillers-just need the basic core of the recipe. I always look for quick, easy and NOT an ingredient list a mile long. Max and Ermas Chicken Tortilla Soup fit that bill. Not sure if Max and Erma is a place to eat or someone that boxes it up to sell. However, I CAN say that this TS version absolutely ROCKS! It's changed enough that I can call it my own without plagiarizing it. Let me know what you think.


1 (11 ounce) can condensed Fiesta nacho cheese soup

2 (10 3/4 ounce) can condensed cream of chicken soup

3 cups of milk ( I used 2%)

2 (10 ounce) can white chicken meat, drained

1 bottle of Ole’ Ole’ Fiesta Sauce


Turn a 1.5 Quart Slow Cooker (small one) on Low. Combine all the ingredients and mix well. Cook 2 hours or so until heated thoroughly. Garnish with Sour Cream, Shredded cheese and tortilla strips.

I took 6 flour tortillas and made Tortilla Wedges to eat with it. Search this blog for the recipe. Brian liked his over Fritos Scoops :)
