Ole' Ole' Enchilada Bake

This recipe came about when I was trying to decrease the time in the kitchen to make enchiladas. Which by the way, if you haven't checked out the Simply Beef Enchilada recipe on this blog, then you MUST. It was by far the best I've ever had at any restaurant much less from my own kitchen :) So this dish uses the same ingredients as that one, except assembled differently. I will use pictures to show the assembly. I also used a Ground Beef Bag to save time not having to cook the meat. So those of you doing the same, just skip the skillet and start with adding to the bowl.

1 lb Ground Beef
1 tsp Seasoned Salt
1 TBSP Onion Onion
15 oz can of Chili Beans (I like Bush's mild)
2/3 cup Ole' Ole' Sauce
1/3 cup sour cream
1 cup Taco Blend shredded cheese or shredded cheddar

Brown Ground Beef with Seasoned Salt and Onion Onion. Drain grease in metal colander . (or use a Ground Beef Bag). In a separate bowl Stir in chili beans, 2/3 cup Ole' Ole' Sauce and sour cream.

Add cooked meat and 1 cup cheese to the bowl

Place 2 large tortillas in a big casserole dish. Tear 1 in half to fill space

our meat mixture on top. Cover with 2 tortillas. Brush on Ole Ole Sauce then top with cheese

Bake for 20 minutes. Serve with kernel corn and rice if you wish.

There is still some Ole Ole Sauce in the bottle left to mix in with some more meat and cheese for a great queso dip or filler for nachos or tacos
