Magnificent Meatloaf



I always make 2 loaves or 8 mini loaves, so there are leftovers because this reheats really well. This was Donna Norris', my college roommate, mom recipe for meatloaf. I use to make it all the time and so I tweaked it with TS ingredients and now it's PERFECT! One loaf will easily feed 4 people and possibly a few kids :D





Ingredients:
4 lbs Ground Beef
2 cups Breadcrumbs (I use homemade see that post)
2 eggs
8 Tbsp Merlot Sauce
1 Tbsp Seasoned Salt
2 Tbsp Onion Onion
1 1/2 cups Heinz Ketchup
1/3 French's Yellow Mustard
1 Tbsp brown sugar

Directions:
Pre-Heat oven to 350 degrees. Combine first 6 ingredients well. Divide meat mixture on a stone bar pan (I use Pampered Chef's). Make two rectangle shape loaves, leaving a little room from the sides of the pan and between the loaves. Mix last 3 ingredients with a wisk or a fork works too. Top loaves with mixture, covering it well including the sides. Bake for 45 minutes. You may also need a baster to remove excess grease from pan, depending on the meat you use--beef 70/30 is way more greasy than chuck 85/15.
