Daily Dinner - Scalloped Potatoes & Ham-4/05/10

Great way to use up some of that left over Easter Ham!

2 -3 tsp. Onion Onion
2 cups cooked, diced ham
3 sliced potatoes (Red Bliss work best)
2 cups prepared Perfectly Potato Cheddar Soup Mix
1 cup shredded Cheddar cheese (reserve 1/4 cup for topping)

Directions

Slice 2-3 red bliss potatoes and put in microwave safe dish, cook on potato setting of 1 or about 5 minutes on high (not to cook all the way just shorten oven time, should still be firm)

Combine with rest of ingredients and pour in greased casserole dish. Bake at 350° for 30 minutes or until added potatoes tender. Top with cheese; bake an additional 10-15 minutes. Makes 4-5 servings.

(if doubling add only 1 cup of more soup or milk with a little flour)

Puree leftovers into a soup (with a little chicken broth to thin), add to mashed potatoes, or pan or oven fry into latkes!
