Super Quick Chicken Quesadillas

Here's a super easy Mexican meal good for dinner or lunch. It has my FAVORITE product in it Corn Black Bean Salsa


Super Quick Chicken Quesadillas

1-2 pkgs. of Purdue Shortcut Chicken; grilled or oven roasted
1 or 2 pkgs. Mexican shredded cheese; depending on how cheesy you want them
Jar of Corn & Black Bean Salsa
Everyday Grillin'
Fiesta Party Dip Mix
Flour tortillas
Butter




1. Season Purdue Shortcuts with Everyday Grillin' Seasoning. You can also use chicken breasts and cook them ahead of time and just put them in a ziploc until you are ready to use them.
2. Butter 2 flour tortillas on one side.
3. In a hot frying pan, put the flour tortilla (butter side down) and spread Corn & Black Bean Salsa, top with mexican shredded cheese and chicken. Sprinkle Fiesta Party Dip Mix to make it a little spicier if you would like.
4. Cover with 2nd tortilla and flip after 2-3 minutes.

Cut into quarters or into 8's. Top with Simply Salsa or your favorite toppings.

Simply Salsa. To make easy salsa:

1 can of diced tomatoes
3 Tbsp. of Simply Salsa
