Simple Southwestern Casserole

This is a very quick meal to put together and on the table fast. You can substitute the chicken for one of your ground beef bags out of the fridge (see Quick Meals with Ground Beef) too. Corn Black Bean Salsa, as many of you know, is one of my FAVORITE products. We easily average one jar a week in this house!


Corn, Black Bean Salsa
1 cup sour cream
1/2 cup chopped black olives
2 cups cooked, diced chicken
8 oz. prepared pasta
1 1/2 cups shredded Cheddar cheese

Combine first 5 ingredients. Sprinkle cheese over top. Bake in greased casserole pan at 350°, uncovered till warm

Add a Salad and dinner is done!
