3 Tbsp. Dried Tomato & Garlic Pesto
2 cups Mozzarella Cheese
4 Tbsp. Parmesan Cheese
1/2 Cup Ricotta Cheese
4 chicken breasts, boneless and skinless
Prepare Dried Tomato & Garlic Pesto as directed on jar with olive oil and water; Mix with Parmesan, Ricotta and one cup of mozzarella. Pound chicken breasts flat; spread mixture on top. Roll up chicken and place on greased baking sheet seam side up. Sprinkle remaining mozzarella on chicken and bake at 400° for 40 minutes.
